Tokuya serves meat from Southern Ocean minke whales
At Tokuya, we serve whale meat and blubber from whales Japanese scientists take in the Southern Ocean. The International Convention for the Regulation of Whaling (ICRW) mandates that as much as possible all whales taken for research under Article VIII of the ICRW be processed and the proceeds dealt with as the permitting Member Government [in this case, Japan] directs [VIII(2)]. Therefore, after the scientists have examined the whales and taken the data they seek, the meat and blubber from whales are sold to help defray the high costs of research.

At Tokuya, we have four important elements that contribute to the good taste of Hari-Hari Nabe.
Prepare the whale meat in advanceTo prepare the hari-hari nabe, we use red whale meat that we have coated with katakuri [water chestnut] powder, then dipped quickly into boiling water. This allows the meat to absorb the broth thoroughly.
MizunaMizuna is a leafy vegetable, a kind of mustard leaf, which does a wonderful job of complementing whale meat. The key to enjoying this dish is to add the mizuna to the broth in small portions and to eat it without overcooking it. Mizuna is full of vitamins. "Hari-hari" comes from the sound people make when they chew the crispy-textured mizuna.
Mexican Chili PepperThe broth of Hari-Hari Nabe contains chili peppers grown in Mexico. The spicy flavour of the pepper is what gives the broth its sharpness, bringing out the flavour of the Hari-Hari Nabe. If you eat the pepper itself, you'll find it is quite hot! Please be careful!
Special BrothThe ingredients of our special broth are Tokuya's secret. We use ample amounts of katsuobushi [dried bonito shavings]. To ensure the most wonderful taste and smell, we use only the highest quality bonito.
